Introduction to Nutrition

COURSE GOAL

The goal of Nutrition 12 is to help students understand the science of nutrition, why they make particular food choices, and the consequences of these food choices. This course will empower students to consciously define their values and to make satisfying nutritional choices that support these values. The emphasis is on sustainability, both in terms of personal and planetary health. The course will also support those who intend to pursue further education in nutrition or another allied health profession or to apply the information in a health care setting.

Eat Well... For your Self, For your World (Required)

The current edition is now available online (follow the link above to order). It is anticipated that it will be in the school bookstore before the semester starts.

Eat Well is a work in progress and frequently updated.  The most recent version has a date of publication on the front page of December 15, 2008.  An earlier edition will not contain adequate course material.
