  • William sent the following recipe saying that he usually has to add a little more flour to get the dough to a rollable consistency!

Mexican Hot Chocolate Snickerdoodles

Ingredients Topping:

  • 1/3 Cup Sugar
  • 1 tsp Ground cinnamon

Cookies:

  • 1/2 Cup Canola oil
  • 1 Cup Sugar
  • 1/4 Cup Pure maple syrup
  • 3 Tbsp Almond milk
  • 2 tsp Vanilla
  • 1 2/3 Cups Flour
  • 1/2 Cup Unsweetened cocoa powder
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/2 tsp Cayenne

Directions

  • Heat oven to 350 degrees Fahrenheit.
  • Mix topping and set aside.
  • Combine wet ingredients in a large bowl and mix well.
  • Sift in dry ingredients and mix to combine.
  • Roll tablespoon sized balls in sugar/cinnamon mixture and place on baking sheet.
  • Press lightly - they won't spread very much.
  • Bake for 10-12 minutes.

Marion's lentil salad recipe

I follow this recipe with a few modifications: I like to use cranberries instead of currants (and I use more like 1.5 or 2 cups), and I eliminate the cardamom (just personal taste, but that's how it was prepared for the potluck!). I've also made the salad with all sorts of crunchy vegetables, and other legumes, and it's delicious many ways -- although the original recipe is probably still my favorite. http://mynewroots.blogspot.com/2010/06/best-lentil-salad-ever.html.
